
Ingredients
1 package plain pork tenderloins (usually 2 pieces)
1 cup apple butter
3 Tbsp. Medieval Faire Seasoning
Potatoes, carrots, celery, onions, cut into chunks (optional)
Preparation
Remove silver skin from pork. Spread half the apple butter onto each pork tenderloin, coating all sides. Sprinkle 1 Tbsp. of the Medieval Faire seasoning on all sides of the pork, and place it into a baking dish. Arrange vegetables around the meat, and sprinkle with remaining Medieval Faire seasoning. Cover pan with foil and put into a preheated 425� oven. Roast for 30 to 35 minutes, remove and check the internal temperature. Pork is done when it reaches 165� in the thickest part of the meat. Allow to brown the last 5 to 10 minutes. Let meat rest 10 minutes, then slice and serve with roasted vegetables and pan juices (may be thickened with a cornstarch slurry, if desired).
