
Ingredients
1 ½ lb. ground beef
1 medium onion, diced
3 bell peppers, diced
4 to 5 (or 12) cloves of garlic, minced
1 29 oz. can crushed tomatoes
2 15 oz. cans beans, drained and rinsed (kidney, black, white, your choice)
4 cups V-8 Juice
3 to 4 T. Chili Chili Not So Bang Bang Seasoning, to taste
3 T. corn starch mixed with water (optional)
Preparation
Brown and drain ground beef in a large cast iron dutch oven. Add onions, peppers, and garlic and saute until onions are translucent and vegetables are soft. Mix in tomatoes, beans, V-8 and seasoning, cover and simmer 30 minutes, stirring frequently. If more liquid is needed, add more V-8, beef broth, beer, or water. If chili is too soupy, add cornstarch slurry, stir and simmer until thicker.
Serve with fresh chopped onion, sour cream, grated cheese, and cornbread for a hearty meal!
