Hen-pecked Rotisserie Chicken

Ingredients

1 whole chicken, giblet pack removed

1 package Hen-pecked Universal Chicken Rub


Preparation

Pat chicken dry with paper towels.  Fold wing tips behind chicken, and truss chicken tightly with kitchen twine to secure legs. Slide chicken onto rotisserie spit and generously sprinkle with Chicken Rub all over.  Place chicken inside rotisserie or air fryer (see note below).  Bake chicken at 350˚  for 40 to 50 minutes, or until meat has reached 160˚  in the thickest part of the thigh.  Remove chicken and let rest 15 minutes.  Remove twine, and carefully separate legs, thighs, and wings, and slice breast.  Sprinkle with additional seasoning before serving.


NOTE:  I cover the drip pan in my air fryer with foil for easier clean up.
